About This Dish

Avocado salsa adds extra oomph to this Mexican-inspired meal of cilantro rice and chili-lime chicken. This recipe is so flavorful, it’ll burst out of any burrito!

Ingredients

Cilantro Rice

  • 1 tablespoon butter
  • 1/2 tablespoon minced garlic
  • 1/4 cup minced yellow onion
  • 1-1/4 cups UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice, uncooked
  • 2-1/2 cups chicken or vegetable broth, hot
  • 1/2 tablespoon kosher salt
  • 2 tablespoons chopped fresh cilantro

 

Chili Lime Chicken

  • 1 package (about 18 ounces) cooked chicken breast strips
  • 1/2 tablespoon olive oil
  • 1/2 teaspoon each: chili-lime seasoning and garlic pepper

 

Avocado Salsa

  •  3/4 cup refrigerated salsa
  •  3/4 cup diced avocado
  • 1/2 tablespoon lime juice
  • 2 tablespoon red onion, diced small
  • 1 tablespoon chopped fresh cilantro
  • 6 flour tortillas, burrito-size
  • 2 cups seasoned black beans, warmed
  • 1-1/2 cups shredded cheddar-jack cheese
  • 6 tablespoons sour cream  

Instructions

  1. To prepare Cilantro Rice, melt butter in heavy saucepan; add garlic and onions. Sauté until tender, stirring frequently. Add rice and stir to coat. Add broth, bring to a boil, reduce heat, cover and simmer for 20 minutes. Season with salt and cilantro.
  2. To prepare Chili-Lime Chicken, heat chicken strips according to package directions. Combine olive oil, chili-lime seasoning and garlic pepper in bowl, add chicken strips and toss to evenly coat.
  3. To prepare Avocado Salsa, combine salsa, avocado, lime juice, red onion and cilantro in bowl; gently fold to blend.
  4. To assemble burritos, arrange 3/4 cup Cilantro Rice in center of each tortilla; divide remaining ingredients evenly and top each. Fold in ends of tortilla and roll closed.
