About This Dish

A hearty and filling chicken dish filled with veggies, accented with herbs, served on a bed of whole-grain brown rice. Getting hungry?

Ingredients

  • 1 cup UNCLE BEN’S® Whole Grain Brown Rice, uncooked
  • Cooking spray
  • 1 pound chicken tenders
  • 4 garlic cloves, sliced
  • 1 cup green beans
  • 1 cup sliced zucchini
  • 1 cup sliced mushrooms
  • 3/4 teaspoon fresh thyme or 1/4 teaspoon dried
  • 1-1/2 teaspoons chopped fresh basil (1/2 teaspoon dried)
  • 2 tomatoes, each sliced into 8 wedges
  • Salt and pepper to taste

Instructions

  1. Prepare rice according to package instructions.
  2. Coat large non-stick skillet with cooking spray. Add chicken and cook 2-3 minutes each side or until cooked through over medium heat. Remove from skillet and set aside.
  3. Add garlic, green beans, zucchini and cook for 2-3 minutes. Add mushrooms and herbs, cook two minutes more. Add tomatoes and cook until heated through. Season with salt and pepper to taste.
  4. Pour ragout over chicken and serve with rice.
