About This Dish

With hearty chicken breast, fresh tomatoes, and smooth avocado, this recipe has the right amount of protein and energy to keep you going all day long!

Ingredients

  • 2 packages UNCLE BEN'S® Whole Grain Medley™ Brown Rice and Quinoa
  • 1 pound cooked, sliced chicken breast
  • 1 ripe avocado
  • 1 cup halved cherry tomatoes
  • 2 green onions, sliced
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 teaspoon dijon mustard
  • 1/4 teaspoon each salt and pepper

Instructions

  1.  Prepare rice according to package directions.
  2. Divide rice among 4 shallow bowls; arrange chicken, avocado and tomatoes on top. Sprinkle with green onions.
  3. Whisk together oil, vinegar, mustard, salt and pepper until blended. Drizzle over rice bowl.
