About This Dish

This recipe brings the flavor of Louisiana to your dinner table. Your family will love how the smooth, rich taste of Cajun sour cream blends perfectly with the spiciness of jalapeño peppers.

Ingredients

  • 6 cups cooked UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice, warm
  • 3/4 cup sour cream
  • 1/4 cup heavy cream
  • 1/2 tablespoon Cajun seasoning
  • 1/8 teaspoon garlic pepper seasoning
  • 6 cups prepared chili, warmed
  • 3/4 cup shredded pepper-jack cheese
  • 3 tablespoons diced red onion
  • 12 breaded onion rings, baked crisp
  • 18 jalapeno slices, fresh (optional)
  •  3/4 cup diced bacon, cooked crisp

Instructions

  1. Prepare rice according to package directions.
  2. To prepare Cajun Sour Cream, combine sour cream, heavy cream, Cajun seasoning and garlic pepper in bowl and whisk to blend.
  3. To serve, spoon 1 cup rice in each bowl; top evenly with chili, shredded cheese, Cajun sour cream, diced red onion, onion rings, jalapeno slices and bacon.
