About This Dish

The flavors of Brussels sprouts and cauliflower really shine in this warm and wholesome dish. But they’re not alone—this recipe includes fresh salad greens, pumpkin seeds, and rice that’s infused with the flavors of Parmesan and butter.

Ingredients

  • 2 cups Brussels sprouts, ends cut off and cut in ½ or ¼ if large
  • 2 cups cauliflower florets
  • 3 tablespoons extra virgin olive oil
  • 1 cup UNCLE BEN’S® Flavor Infusions Parmesan & Butter, cooked according to package directions (about 3 ½ cups cooked)
  • 2 cups baby Arugula or spinach leaves (or favorite greens)
  • ¼ cup roasted pumpkin seeds (pepitas) (or toasted almonds)
  • 2 tablespoons shredded Parmesan cheese

Instructions

  1. Heat oven to 400°F.
  2. In a 13 x 9-inch baking pan, toss together Brussels sprouts, cauliflower, and olive oil.
  3. Bake, stirring occasionally, until vegetables soften and are lightly browned (about 20 minutes).
  4. In large bowl stir together vegetables, rice, Arugula, and pumpkin seeds.
  5. Serve on individual plates.
  6. Sprinkle with Parmesan cheese. Refrigerate leftovers.
