About This Dish

Blue cheese adds the perfect touch to this broccoli and rice dish. Your family will enjoy it as a snack, an appetizer or a side dish.


  • 1 box  UNCLE BEN’S® COUNTRY INN® Broccoli Rice au Gratin
  • 10 ounces broccoli florets
  • 2 medium carrots, peeled and sliced
  • 1/4 cup olive oil
  • 2-1/4 tablespoons white wine vinegar
  • Salt and black pepper to taste
  • 1 medium tomato, chopped
  • 1/2 cup crumbled blue cheese
  • 1/2 cup toasted and chopped pecans 


  1. Prepare the rice according to package instructions and transfer to serving dish.
  2. Meanwhile, blanch broccoli and carrots in a large pot of rapidly boiling water until crisp-tender. Drain and rinse under cold water.
  3. Arrange broccoli and carrots over the rice.
  4. In a small bowl, whisk together olive oil and vinegar and season with salt and black pepper. Drizzle over rice and vegetables.
  5. Top with chopped tomato, cheese and toasted pecans.
