Ingredients

  • 1 Flank Steak
  • 1/2 cup tightly packed spinach leaves
  • 1/4 cup tightly packed fresh cilantro
  • 1 3/4 cups water
  • 1 tablespoon canola oil
  • 1 box (5 ounces) UNCLE BEN'S® COUNTRY INN® Chicken & Broccoli Rice

Instructions

  1. Marinate flank steak.  In 1-gallon resealable food-safe bag, combine 3 tablespoons lime juice, 2 tablespoons vegetable oil, 1 teaspoon ground cumin, 1/2 teaspoon ground oregano and several dashes of hot sauce. Add 1 pound flank steak; seal bag. Coat with marinade. Refrigerate 2 to 24 hours, turning occasionally.
  2. In blender container, process spinach, cilantro and water until pureed. Meanwhile, heat oil in 2-quart heavy saucepan. Cook and stir rice in hot oil 2 minutes or just until beginning to brown. Stir in contents of seasoning packet and the spinach mixture. Heat to boiling. Cover; simmer 20 minutes. Remove from heat. Set aside 5 minutes or until water is absorbed. Fluff with fork.
  3. Meanwhile, while rice is cooking, heat grill for direct heat. Remove beef from marinade; discard marinade. Grill beef covered over medium heat 12 to 15 minutes.
  4. Cut beef diagonally across grain and serve over green rice.
