About This Dish

Fresh cilantro, corn, and avocado make this Beef Burrito Bowl with Cilantro Rice a hearty and delicious recipe with a Tex-Mex accent.

Ingredients

  • 1 (15-ounce) package HORMEL® Slow Simmered Beef Roast Au Jus
  • 1 (8.8-ounce) package UNCLE BEN'S® Original Long Grain Ready Rice
  • 2 teaspoons vegetable oil
  • 2 cups frozen bell pepper-onion blend
  • 1 cup frozen roasted or whole kernel corn
  • 1/2 teaspoon chipotle chili powder
  • 2 tablespoons chopped fresh cilantro
  • 1 teaspoon grated lime zest
  • 1 teaspoon fresh lime juice
  • 2 cups chopped Romaine lettuce or chopped baby spinach

  • 4 teaspoons sour cream
  • 4 teaspoon grated Cotija cheese

Instructions

  1. Heat beef according to package directions.
