Ingredients

1package UNCLE BEN’S® READY WHOLE GRAIN MEDLEY™ Vegetable Harvest
1/2 lemon zested and juiced
14ozs. garbanzo beans or chickpeas, drained
2ozs. fresh baby spinach
8ozs. tomato juice

Instructions

1. Combine tomato juice and rice, heat for 2 minutes over medium high.
2. Add spinach, garbanzo beans and lemon juice. Continue cooking for 3 minutes
3. Toss with lemon zest just before serving.
