Ingredients
| 1 | cup UNCLE BEN’S® Fast & Natural™ Whole Grain Instant Brown Rice |
| 1/2 | lb shrimp peeled and deveined |
| 1/2 | cup pea pods julienned |
| orange wedges |
| 1/2 | large onion chopped |
| 1/2 | tsp. orange peel finely grated |
| 1 | clove garlic minced |
| 3 | Tbsp. salsa |
| 1/2 | cup water |
| 1/4 | tsp. salt |
| 1/2 | tsp. olive oil |
Remove shrimp when cooked, they will not need the full cooking time the rice will need.

Instructions
1. In a saucepan, sauté onion and garlic in oil until tender. Add water and salsa. Bring to boil.
2. Stir in rice, shrimp, orange peel and salt. Reduce heat. Cover and simmer 5 to 7 minutes.
3. Stir in pea pods. Cover and simmer an additional 3 minutes or until liquid is absorbed.
4. Garnish with orange wedges.
