The best way to get to the meat of the matter is to go through a bowl of rice.

Uncle Ben’s Porcupine Chicken Meatballs

Ingredients

1/2cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice
1lb. ground chicken
1/4cup onion finely diced
1 clove garlic minced
1/4 fresh parsley chopped
1/2cup water
1 28-ounce can of tomato sauce
1tsp. Italian seasoning spice mix
1/2tsp. salt
1/2tsp. pepper
1/4cup milk

Instructions

In a large bowl, combine the uncooked rice, ground chicken, onion, garlic, parsley, Italian seasoning, salt and pepper and milk. With clean, wet hands, thoroughly incorporate the mixture until all the ingredients are well combined.

Meanwhile in a large skillet, pour in the tomato sauce and water and begin heating on low. With clean, wet hands, form the meat/rice mixture into about 1-inch balls and drop into sauce. Once you have made all the meatballs, cover the skillet and turn up the heat to medium. Cook for 15 minutes and carefully remove the cover and turn each meatball over and turn down the heat to low. Cover and cook on low for another 15 minutes. Remove the cover and carefully stir to combine the tomato sauce and meatballs. Serve or allow to cool and reheat for later.
