Ingredients
| 1 | pouch UNCLE BEN’S® READY WHOLE GRAIN MEDLEY™ Brown & Wild |
| 2 | cups frozen peas |
| 1/3 | cup Parmigiano Reggiano (grated) |
| 1 | small red onion finely diced |
| 1 | large clove garlic finely chopped |
| 1/2 | cup pesto |
| 3 | Tbsp. extra virgin olive oil |
Instructions
1. Heat a medium skillet over medium high heat.
2. Add extra-virgin olive oil, onion and garlic and sauté, stirring constantly for 2 to 3 minutes.
3. Add the peas seasoned with salt and pepper, contents of UNCLE BEN’S® READY WHOLE GRAIN MEDLEY™ Brown & Wild Rice pouch, cover pan with tight fitting lid and continue to heat 3 minutes.
4. Remove from heat and let stand 3 minutes. Remove lid and stir in pesto.
5. Replace lid and allow to stand 1 minute. Remove lid, sprinkle with cheese and serve immediately.
