Ingredients
| 1 | cup UNCLE BEN’S® READY RICE® Whole Grain Brown |
| 1 | rotisserie chicken (purchased), sliced into thin strips |
| 1 | cup bell peppers thinly sliced |
| 6 | plum (roma) tomatoes or cherry tomatoes, chopped |
| 1 | cup carrots shredded |
| 4 | lettuce leaves |
| 1 | cup cucumber or zucchini peeled and sliced into matchsticks |
| 1/2 | cup honey |
| 1/4 | cup Dijon mustard |
| 1 | avocado thinly sliced |
| 6 | whole wheat tortillas or veggie tortillas (6-8 inch) |
Instructions
Let’s Get Rolling!
Tortilla Rolls:
1. Cook UNCLE BEN’S® READY WHOLE GRAIN RICE® Whole Grain Brown according to package directions.
2. Place each tortilla on a sheet of foil or waxed paper the same size as the tortilla. Spread equal amounts of rice onto one side of each tortilla spreading the rice almost to the edge of the tortilla.
3. Place 2-3 slices of chicken strips about 1 inch off-center on each tortilla. Sprinkle shredded carrots and cucumber or zucchini on top of the chicken. Line up a few sliced peppers and avocado slices next to the chicken. Toss 3-5 chopped tomatoes over all of the ingredients.
4. Using foil or waxed paper, begin to roll up each tortilla starting on the side closest to the chicken mix. Make the roll as tight as possible. Continue until all tortillas are securely wrapped. Place them on a sheet pan and refrigerate for at least 15 minutes.
5. Honey Mustard Sauce:
Combine the Dijon mustard and honey in a 2-cup measuring cup. Stir with a whisk to blend. Pour sauce into a squirt bottle and refrigerate until ready to serve.
*There will be approximately 1 cup of extra rice from this recipe. Store covered rice in refrigerator for up to 5 days. Use the extra rice in either the Brown Rice and Black Bean Mini-Burger or the Brown Rice Veggie Pizza recipes.

Serving Suggestions
Take rolls from refrigerator, and remove foil or waxed paper.
With a serrated-edge knife, cut each roll into 5 “sushi slices.”
Line plates with lettuce and place tortilla slices on top of
lettuce. Drizzle each slice with a small amount of honey mustard
sauce.
Kid-friendly Kitchen Tips
Give kids a chance to make decisions! Set up a “bar” with
different-sized bowls filled with the veggies and rice. Start an
assembly line by having children put waxed paper or foil on
heavy-duty disposable or nonbreakable plates. Hand them each a
tortilla and let them choose the ingredients they want to use to
create their own “signature roll.” After the rolls are made,
sliced, and are ready to serve, suggest that everyone trade 1
roll with another person. A fun and creative way to encourage
kids to try different tastes!
