Ingredients
| 1/2 | cup UNCLE BEN’S® Fast & Natural™ Whole Grain Instant Brown Rice (dry) |
| 1 | cup raisins or chopped dried fruit |
| 1/2 | cup unsalted butter (room temperature) |
| 1 | egg |
| 1/4 | cup nuts (for topping) |
| 3/4 | cup flaked coconut |
| 1 | Tbsp. vanilla |
| 1/4 | tsp. salt |
| 1 | cup flour |
| 1 1/2 | tsp. baking powder |
| 2 | tsp. cinnamon (for topping) |
| 2 | Tbsp. brown sugar (for topping) |

Instructions

• Preheat oven to 375 degrees F
Rice:
• Cook UNCLE BEN’S® Fast & Natural™ Whole Grain Instant Brown Rice according to package directions.
Cookie:
• Generously spray a 9-10 inch cast iron or heavy metal skillet (with an ovenproof metal or wooden handle) with cooking spray. Place the skillet on a cookie sheet and set aside.
• Cream together butter and sugar with a mixer until light and fluffy. Add the egg and vanilla and mix until the batter is smooth and creamy.
• Add flour, baking powder, and salt. Mix until wet and dry ingredients are well combined. Stir in rice, coconut, and raisins or chopped dried fruits.
• With a spatula, scoop cookie batter from mixing bowl into prepared skillet. Smooth out batter evenly in pan.
Topping:
• Combine brown sugar, cinnamon, and chopped nuts in a small zip- close plastic bag. Seal shut and shake to combine ingredients. Sprinkle mixture evenly over the top of the cookie batter.
• Bake 25 - 30 minutes or until top of cookie is golden brown. Carefully remove from oven and cool in skillet 15 minutes before slicing into pie-shaped pieces. Serve cookies from skillet.

Serving Suggestions
• A great treat to take to a party or serve at a party. For a special presentation top each cookie slice with whipped cream or your favorite, frozen yogurt or ice cream and sprinkles.
Kid- friendly Kitchen Tips
• Encourage younger children to participate in this cooking activity by giving them the responsibility of shaking the topping ingredients together in a plastic bag.
• Change the recipe by adding different combinations of dried fruits and encourage children to choose the fruits they like best. Dried cherries, blueberries, cranberries, and golden raisins are great options.
• Have older children read directions aloud and measure the ingredients while the younger children pour all of the ingredients into the mixing bowl.
