Ingredients
| 1 | cup UNCLE BEN’S® Fast & Natural™ Whole Grain Instant Brown Rice |
| 2 | cups cooked turkey cubed |
| 2/3 | cup red bell pepper finely chopped |
| 3 | cups mushrooms |
| 2 | Tbsp. margarine |
| 2 | cloves garlic minced |
| 1/2 | tsp. dried thyme crushed |
| 1/2 | cup green onions with tops sliced |
| 1/4 | tsp. ground black pepper |
| 2 | cans chicken broth |
| 1 | cup dry white wine |
| non stick cooking spray |
Make sure you check the seasoning and add salt if necessary. Add black pepper if desired

Instructions
1. Sauté turkey meat with nonstick cooking spray until cooked and golden brown, and set aside.
2. In a large saucepan, sauté garlic and mushrooms in margarine for 1 minute.
3. Add chicken broth, wine, thyme, black pepper, and rice. Bring to a boil, cover tightly, reduce heat and simmer for 10 minutes.
4. Core, seed, and chop red pepper.
5. Diagonally cut green onion tops into 1" pieces.
6. Stir in turkey and red bell pepper, heat thoroughly.
7. Garnish with green onion and serve.
