Ingredients
| 1 1/2 | cups UNCLE BEN’S® Fast & Natural™ Whole Grain Instant Brown Rice |
| 1/2 | lb. ground turkey |
| 1 | can kidney beans |
| 1 | cup celery sliced |
| 1 | cup onion chopped |
| 1 | can tomatoes (low sodium) |
| 1/2 | cup shredded cheddar cheese |
| 1 | tsp. garlic powder |
| 1/4 | tsp. ground red pepper |
| 2 | tsp. dried oregano crushed |
| 1/2 | tsp. black pepper |
| 1 | cup water |
| 1/2 | tsp. dried basil crushed |
| 7/8 | nonstick cooking spray |
Instructions
1. Preheat oven to 350°F.
2. Spray an unheated large skillet with the nonstick cooking spray.
3. Add the turkey, celery, and onion, and cook over medium heat until the turkey browns.
4. Drain tomatoes, reserving juice. Chop coarsely and set aside.
5. Combine the turkey mixture, rice, kidney beans, tomatoes and their juice, water, oregano, garlic powder, black pepper, basil and red pepper in a 2-1/2 quart casserole dish. Mix well.
6. Bake uncovered at 350°F for 25 minutes.
7. Sprinkle with cheese and bake until the cheese melts. Serve.
