Ingredients
| 1 | pouch UNCLE BEN’S® READY RICE® Whole Grain Brown |
| 1 | package firm tofu cubed |
| 1/4 | cup Parmesan cheese shredded |
| 1 | package mixed vegetables (small) frozen |
| 1/2 | cup marinara sauce |
| 1 | Tbsp. olive oil |
Instructions
1. Heat pan, add oil and tofu. Brown lightly.
2. Add vegetables, and cook 2 minutes.
3. Mix in rice with marinara sauce in pan. Heat for 3 minutes.
4. Sprinkle cheese on top.
