Tex Mex Sunburst

Ingredients

4cups UNCLE BEN’S® Boil-In-Bag Rice
1/2lb. ground beef
1can kidney beans drained
1/2cup onion chopped
1/2cup low-fat Monterey Jack cheese shredded
2Tbsp. cilantro chopped
6tsp. package taco seasoning mix
2oz. tortilla chips
1can tomatoes (low-sodium), diced

Instructions

1. Cook rice according to package instructions.
2. Meanwhile, in a large skillet, brown beef and onion. Drain off the fat and discard.
3. Add beans, tomatoes and taco seasoning to meat mixture. Bring to boil, then simmer 10 minutes or until mixture thickens.
4. Pour cooked rice into serving dish, top with meat mixture and arrange tortilla chips around outside edge of dish.
5. Sprinkle with cheese and cilantro. Serve.
