Tex-Mex Rice Wrap

Ingredients

2 1/2cups UNCLE BEN’S® Fast & Natural™ Whole Grain Instant Brown Rice
1/2cup chopped green pepper
1cup chopped tomato
1/2cup shredded Monterey Jack cheese
1/4cup chopped cilantro
1/2cup Dijon mustard
1/4cup red wine vinegar
1cup sliced cucumber
1cup corn
1can sliced black olives (4-6 ounce)
1/2 lime juiced
1Tbsp. salt-free seasoning
1/4cup olive oil
2 3/4cups water

Instructions

1. Cook rice with water according to package directions. Once cooked, set aside to cool slightly.
2. Whisk together red wine vinegar, olive oil, salt-free seasoning and lime juice. Combine all the vegetables and toss with dressing to marinate.
3. Gently combine marinated vegetables and cheese with rice.
4. Serve as a salad or a wrap with lettuce.
