Ingredients
| 2 | cups UNCLE BEN’S® Boil-In-Bag Rice |
| 2 | cups chicken cubed |
| 1/2 | medium red bell pepper diced |
| 1 | medium onion chopped |
| 1 | cup pineapple chunks |
| 2 | Tbsp. raisins |
| 2 | cloves garlic |
| 1 | cup salsa |
| nonstick cooking spray |
Instructions
1. Cook rice according to package instructions. Set aside.
2. Spray 12-inch skillet with nonstick cooking spray. Sauté onions, peppers and chicken on medium-high heat (5 to 7 minutes).
3. Add pineapple, salsa, raisins and garlic salt to chicken mixture. Mix until combined.
4. Heat thoroughly. Serve over rice.
