Stir-Fry Chicken and Vegetables

Ingredients

1cup UNCLE BEN’S® Fast & Natural™ Whole Grain Instant Brown Rice (uncooked)
2 boneless skinless chicken breasts cut into thin strips
1/2cup red bell pepper cut into thin strips
1/2cup carrots cut into thin strips
1cup sugar snap peas
1/4cup lite soy sauce
2Tbsp. water
2Tbsp. cornstarch
nonstick cooking spray

Instructions

1. Prepare rice according to package directions.
2. Combine cornstarch and water until smooth. Add soy sauce and set aside. Apply coating spray to nonstick skillet. Add chicken breast and cook for 3 to 4 minutes or until almost completely cooked. Add vegetables and soy sauce mixture. Serve stir-fry over rice.
