Ingredients
| 1 | cup UNCLE BEN’S® Fast & Natural™ Whole Grain Instant Brown Rice (uncooked) |
| 2 | boneless skinless chicken breasts cut into thin strips |
| 1/2 | cup red bell pepper cut into thin strips |
| 1/2 | cup carrots cut into thin strips |
| 1 | cup sugar snap peas |
| 1/4 | cup lite soy sauce |
| 2 | Tbsp. water |
| 2 | Tbsp. cornstarch |
| non stick cooking spray |
Instructions
1. Prepare rice according to package directions.
2. Combine cornstarch and water until smooth. Add soy sauce and set aside. Apply coating spray to non-stick skillet. Add chicken breast and cook for 3 to 4 minutes or until almost completely cooked. Add vegetables and soy sauce mixture. Serve stir-fry over rice.
