| 12 | cups UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 4 | cups fresh spinach chiffonade (cut into fine strips) |
| 1 | cup crisp bacon crumbled |
| 1 | cup green onions sliced |
| 2 | cups celery sliced |
| 2 | tsp. garlic minced |
| 1/2 | cup soy sauce |
| 3/4 | cup cider vinegar |
| 1 | cup vegetable oil |
| 2 | tsp. sugar |
For a creamier dressing use mayonnaise instead of oil when mixing the ingredients.

Instructions
1. Cook rice according to package instructions.
2. In a large bowl, combine cooked rice, spinach, celery, onion and bacon.
3. In another bowl, combine dressing (remaining) ingredients.
4. Pour dressing over rice/vegetable mixture. Toss well and refrigerate.
