Spanish Shrimp

Ingredients

1pouch UNCLE BEN’S® READY RICE® Spanish Style Rice
1lb. shrimp peeled and deveined
1/2cup red bell pepper sliced
1/2cup onion sliced
2tsp. olive oil
1Tbsp. capers
1/2cup artichokes
1 1/2cups water

Instructions

1. In skillet with lid, heat oil and sauté peppers and onions for 1 minute.
2. Add rice, water; bring to boil. Cover, reduce heat to medium low.
3. Simmer 5 minutes. Add shrimp, capers and artichokes. Re-cover, cook 5 to 7 minutes or until liquid is absorbed.
