Instructions

1. In skillet with lid, heat oil and sauté peppers and onions for 1 minute.
2. Add rice, water; bring to boil. Cover, reduce heat to medium low.
3. Simmer 5 minutes. Add shrimp, capers, and artichokes. Re-cover, cook 5 to 7 minutes or until liquid is absorbed.
