Ingredients
| 2 | cups UNCLE BEN’S® Boil-In-Bag Rice |
| 4 | slices bacon |
| 2 | cups yellow squash chopped |
| 2 | medium tomatoes chopped |
| 4 | green onions sliced |
| 1/2 | tsp. Old Bay Seasoning |
Add in chicken if desired.

Instructions
1. Cook rice according to package instructions.
2. Cook bacon in a large skillet until crispy. Drain on a paper towel. Pour off all but one tablespoon of the grease.
3. Return skillet with grease to heat.
4. Add squash and sauté until lightly browned.
5. Add Old Bay Seasoning.
6. Stir in green onions and tomatoes.
7. Add cooked rice and mix well with vegetables.
8. Adjust seasonings, as desired.
