Ingredients
| 2 | boxes UNCLE BEN’S® COUNTRY INN® Broccoli Rice Au Gratin |
| 1 1/2 | lb. cooked turkey cubed |
| 3/4 | cup onion chopped |
| 1 | cup tomatoes |
| 1 | tsp. sage |
| 2 | Tbsp. cilantro |
| 1 | Tbsp. lime juice |
| 1/3 | cup vegetable oil |
| 1 | tsp. ground cumin |
| 3/4 | cup canned green chilies |
| 3/4 | cup chicken broth |
Instructions
1. Combine vegetable oil, chicken broth, lime juice and cilantro in a shallow pan or dish. Add bite size turkey pieces and let marinate.
2. Prepare rice according to package directions for 2 boxes, adding chopped onion, green chilies, cumin and sage to water.
3. During the last 5 minutes of cook time, stir in turkey pieces (do not add marinade). Remove from heat and set aside for 5 minutes; stir.
4. Top with chopped tomatoes and garnish with fresh cilantro; serve.
