Shrimp Curry

Ingredients

1cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice
1/2lb. cooked shrimp peeled
1cup single cream or milk
1oz. butter
1large onion finely chopped
1medium apple finely chopped
1stalk celery finely chopped
almonds
coconut
1tsp. salt
2Tbsp. flour
1tsp. sugar
1/8tsp. pepper
1Tbsp. curry powder
mango chutney

Instructions

1. Cook rice according to package instructions.
2. Cook onion apple, and celery in butter until tender, but not brown.
3. Blend in curry powder, flour, salt, pepper and sugar. Cook for 1 minute, then add cream or milk.
4. Simmer, stirring until thickened. Add shrimp and heat through.
5. Serve with rice and accompaniments.

tips and notes
Add chicken, chili flakes and potatoes to the curry mixture, and serve over rice. Garnish this dish with finely chopped fresh mint.
