Instructions
1. Combine the rice, water, butter, lemon peel and salt in a large saucepan. Bring to a vigorous boil and cover, then turn the heat down and simmer until all the liquid is absorbed, about 20 minutes. Chill the rice.
2. Combine the pudding mix and milk and make the pudding according to package directions on the package. Fold the rice into the pudding.
3. Place the berries, sugar and sherry into a blender and puree.
4. Place the pudding on a serving dish, pour the sherry sauce over pudding, and garnish with additional strawberries and mint leaves.
