Sherried Rice with Strawberries

Ingredients

1cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice
strawberries for garnish
4cups milk
1Tbsp. butter
1 lemon grated
2packages vanilla instant pudding
2 1/4cups water
1/2tsp. salt
1/4cup sugar
3Tbsp. cream sherry
mint leaves for garnish

Instructions

1. Combine the rice, water, butter, lemon peel and salt in a large saucepan. Bring to a vigorous boil and cover, then turn the heat down and simmer until all the liquid is absorbed, about 20 minutes. Chill the rice.
2. Combine the pudding mix and milk, and make the pudding according to package directions on the package. Fold the rice into the pudding.
3. Place the berries, sugar and sherry into a blender and puree.
4. Place the pudding on a serving dish, pour the sherry sauce over pudding, and garnish with additional strawberries and mint leaves.

tips and notes
May use a fruit of your choice and make a different sauce. Raspberries or blackberries are suggested.
