Ingredients
| 1 | box UNCLE BEN’S® COUNTRY INN® Broccoli Rice Au Gratin |
| 8 | oz. scallops |
| 1 | clove garlic finely minced |
| 2 | Tbsp. light soy sauce |
| 2 | Tbsp. rice wine vinegar |
| 2 | Tbsp. Honey |
| 1 | Tbsp. sesame oil |
| 1 | Tbsp. vegetable oil |
| 1/4 | cup toasted sesame seeds |
| 1 | salt and coarsely ground black pepper to taste |
Instructions
1. Prepare rice according to package instructions.
2. Whisk soy sauce, vinegar, oils, honey and garlic in a large bowl until blended. Season to taste with salt and pepper.
3. Add the scallops and half of the toasted sesame seeds, marinate for 10 minutes.
4. Heat a large skillet. Use a slotted spoon to remove scallops from marinade and sauté until lightly golden on both sides and cooked through, do not overcook.
5. Add remainder of marinade to skillet and heat to a boil. Remove from heat.
6. Transfer rice to serving dish.
7. Spoon scallops over rice and pour the rest of the sauce over the rice. Sprinkle with the remaining sesame seeds. Serve immediately.
