Sausage and Beans with Rice and Vegetables

Ingredients

1 3/4pints UNCLE BEN’S® Instant Rice
6cups kidney beans
2 1/2lb. smoked sausage sliced
1medium onion sliced
1medium green bell pepper sliced
1 1/4tsp. garlic powder
2 3/8cups water
2 1/2Tbsp. vegetable oil
2 1/2tsp. Cajun seasoning
salt and pepper to taste

Instructions

1. In a large sauce pan, heat the oil and sauté the sausage, onion, and green pepper for about 2 minutes. Add in the Cajun seasoning. Mix until well coated.
2. Add the beans, garlic, salt and pepper.
3. Add the rice, water; bring to boil, cover and remove from heat.
4. Let stand for 5 minutes before serving.

tips and notes
Top with grated cheddar or pepper jack cheese. Use jalapeno peppers or red pepper flakes if more spice is desired.
