Ingredients
| 1 1/4 | cups UNCLE BEN’S® Fast & Natural™ Whole Grain Instant Brown Rice |
| 1 | lb. boneless, skinless chicken breast |
| 1 | cup celery chopped |
| 1 | cup onion chopped |
| 1 | tsp. sage |
| 2 | Tbsp. margarine |
| 1/8 | tsp. ground black pepper |
| 3 | slices whole wheat bread cut into 1/2 cubes |
| 2 | cups chicken broth divided |
| 1/2 | tsp. sodium-free poultry seasoning |
Instructions
1. Chop the onion and celery.
2. In a large saucepan, melt the margarine and sauté the onion and celery until tender, about 5 minutes.
3. Stir in sage, poultry seasoning, and black pepper.
4. Add 1-1/2 cups chicken broth and rice. Bring to a boil, cover tightly, reduce heat and simmer for 10 minutes.
5. In another pan, sauté chicken in remaining 1/2 cup broth, until slightly brown.
6. Remove rice from heat, stir in bread cubes and chicken. Cover and let stand for 5 minutes.
