Sage Brown Rice Stuffing

Ingredients

1 1/4cups UNCLE BEN’S® Fast & Natural™ Whole Grain Instant Brown Rice
1lb. boneless, skinless chicken breast
1cup celery chopped
1cup onion chopped
1tsp. sage
2Tbsp. margarine
1/8tsp. ground black pepper
3slices whole wheat bread cut into 1/2 cubes
2cups chicken broth divided
1/2tsp. sodium-free poultry seasoning

Instructions

1. Chop the onion and celery.
2. In a large saucepan, melt the margarine and sauté the onion and celery until tender, about 5 minutes.
3. Stir in sage, poultry seasoning, and black pepper.
4. Add 1-1/2 cups chicken broth and rice. Bring to a boil, cover tightly, reduce heat and simmer for 10 minutes.
5. In another pan, sauté chicken in remaining 1/2 cup broth, until slightly brown.
6. Remove rice from heat, stir in bread cubes and chicken. Cover and let stand for 5 minutes.

tips and notes
Sauté some chopped or grated carrot with the celery and onions for a little sweetness, added flavor, and color.
