Ingredients
| 2 | boxes UNCLE BEN’S® COUNTRY INN® Broccoli Rice Au Gratin |
| 4 | chicken breast halves, boneless and skinless |
| 2 | medium plum tomatoes chopped |
| 1 | large clove garlic minced |
| 3 | Tbsp. rosemary |
| 1/4 | tsp. lemon zest |
| 2 | Tbsp. fresh lemon juice |
| 1 | Tbsp. olive oil |
| salt and pepper to taste |
Instructions
1. Cook rice according to package instructions for 2 boxes.
2. Slice chicken breast into 1/2 inch strips. Sprinkle with garlic, rosemary, salt and pepper to taste.
3. Heat olive oil in non-stick skillet. Sauté chicken until lightly brown. Remove to serving platter and keep warm.
4. Add lemon juice to drippings in skillet. Cook and stir about one minute. Drizzle over chicken.
5. Stir lemon zest and plum tomatoes into rice. Serve alongside chicken.
