Ingredients
| 1/2 | cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 1 1/4 | cups milk |
| 6 | strawberries |
| 3/4 | cup candied fruit finely chopped |
| 4 | egg yolks |
| 3/4 | cup hot milk |
| 1 | cup heavy cream |
| 1/2 | cup sugar |
| 2 | Tbsp. cold water |
| 1 | vanilla bean(s) split and vanilla removed |
| 1 | envelope powdered gelatin |
Instructions
1. Beat egg yolks and set aside.
2. Cook rice in milk in top of double boiler, stirring constantly.
3. Pour in mixing bowl. Now, combine beaten egg yolks, sugar, hot milk and vanilla seeds and bean pod in the top of the boiler.
4. Cook over boiling water, stirring constantly until thick and smooth. Stir in 1 envelope gelatin softened in 2 tablespoons water.
5. Add rice, candied fruits and 1 cup heavy cream, whipped. Turn rice into a decorative ring mold and chill in the refrigerator for at least 4 hours.
6. To serve, unmold the rice onto a chilled platter and garnish it attractively with fresh strawberries and leaves.
