Ingredients
| 1 1/2 | cups UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 1/4 | cup prosciutto minced |
| 1/3 | cup grated parmesan cheese |
| 2 | cups sliced mushrooms |
| 2 | cups chopped onion |
| 1/4 | cup butter |
| pinch saffron |
| 3 | cups chicken broth |
| 1/2 | tsp. salt |
| 1/2 | tsp. pepper |
Instructions
1. Cook onions in melted butter until golden; add mushrooms and cook about 4 minutes.
2. Add chicken broth and bring to a boil.
3. Stir in rice, salt, pepper and saffron. Cover tightly and cook over low heat for 20 minutes.
4. Stir in prosciutto and continue for 5 minutes longer or until water is absorbed.
5. Stir in parmesan cheese. Serve hot.
