Ingredients
| 1 | cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 3/4 | cup currants |
| 1 | medium onion peeled and chopped |
| 2 | Tbsp. butter |
| 1 | Tbsp. vegetable oil |
| 1/4 | tsp. ground cinnamon |
| 1/4 | tsp. ground cumin |
| 1 | cup walnuts chopped |
| 1/4 | tsp. ground coriander |
Instructions
1. Cook rice according to package instructions. Add butter when done. Keep warm.
2. Meanwhile, peel and chop onion, fry in a little oil with currants and chopped walnuts until onions are transparent- 4 to 5 minutes.
3. Add the spices and fry for 1 min. longer, stirring with a wooden spoon to prevent burning.
4. Put rice in a oven-proof casserole, making a well in the center. Pour the currant mixture into the well and fork the rice back over the top.
5. Bake, covered with a tightly fitting lid, at 350 F for 20 minutes.
