Rice, Avocado, and Artichoke Salad

Ingredients

3cups UNCLE BEN’S® Boil-In-Bag Rice
1 avocado cored, peeled, and sliced
1/4cup lemon juice
1/4tsp. garlic powder
3/4tsp. salt
1/4tsp. black pepper
2Tbsp. olive oil
1tsp. dill weed dried
1/2tsp. mustard powder
1can artichoke hearts drained

Instructions

1. Cook rice according to package instructions. Cool.
2. Combine mustard powder, garlic powder, salt, black pepper, dill weed, vegetable oil, olive oil, and lemon juice.
3. Add rice, avocado and artichoke hearts, and stir.

tips and notes
Cube avocado instead of slice. It will hold up better in the salad.
