Ingredients
| 3 1/2 | cups UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 2 | cups chicken diced |
| 1/2 | lb. shrimp peeled and deveined |
| 1/3 | cup chopped onion |
| 2 | Tbsp. butter |
| 15 | oz. tomatoes |
| 2 | Tbsp. chopped parsley |
| 1/2 | cup green pepper diced |
| 1 | tsp. dried thyme |
| 1/4 | tsp. hot pepper sauce |
| 1 | tsp. salt |
| 1/4 | cup flour |
| 7 | cups water (to prepare rice) |
Instructions
1. Cook rice according to package instructions.
2. While rice is cooking, cook green pepper and onion in butter in large saucepan until tender but not brown. Stir in flour.
3. Add tomatoes, chicken, salt, thyme and hot pepper sauce. Break up tomatoes with spoon. Cover and simmer 20 minutes.
4. Add shrimp and continue cooking 5 minutes. Stir parsley into hot cooked rice.
5. To serve, spoon gumbo into individual serving bowls; top with rice.
