| 1 | cup UNCLE BEN’S® Fast & Natural™ Whole Grain Instant Brown Rice |
| boneless skinless chicken breasts (4 oz. each) pounded flat |
| 1 | cup 1% milk |
| 1/2 | onion diced |
| 1 | egg |
| 2 | Tbsp. lite soy sauce |
| 1/2 | cup pumpkin seeds |
| 1/2 | cup ground pumpkin seeds |
| 2 1/2 | cups water |
| 1/4 | cup flour |
| 3 | Tbsp. vegetable oil |
| 1/2 | tsp. black pepper |
Instructions
1. Bread the chicken by lightly flouring it and dipping it into a mixture made by combining the milk and egg, then breading it with the ground pumpkin seeds.
2. In a saucepan sauté the onion in 1-tablespoon oil until transparent. Add soy sauce, pepper, rice and water; bring to a boil, reduce heat to simmer and cover. Cook for 30 minutes.
3. While the rice is cooking, start sautéing the chicken in the remainder of the oil being careful not to overcook it.
4. When the rice has finished cooking stir in the pumpkin seeds and serve with the sautéed chicken.
