Stir-Fry Chicken and Vegetables

Ingredients
| 1 | cup UNCLE BEN’S® Fast & Natural™ Whole Grain Instant Brown Rice (uncooked) |
| 2 | boneless skinless chicken breasts cut into thin strips |
| 1/2 | cup red bell pepper cut into thin strips |
| 1/2 | cup carrots cut into thin strips |
| 1 | cup sugar snap peas |
| 1/4 | cup lite soy sauce |
| 2 | Tbsp. water |
| 2 | Tbsp. cornstarch |
| nonstick cooking spray |
Instructions
1. Prepare rice according to package directions.
2. Combine cornstarch and water until smooth. Add soy sauce and set aside. Apply coating spray to nonstick skillet. Add chicken breast and cook for 3 to 4 minutes or until almost completely cooked. Add vegetables and soy sauce mixture. Serve stir-fry over rice.
