Tex Mex Rice Salad Wrap

Ingredients
| 2 1/2 | cups UNCLE BEN’S® Fast & Natural™ Whole Grain Instant Brown Rice |
| 1 | can corn drained |
| 1/2 | cup Monterey Jack cheese shredded |
| 1 | cup tomato chopped |
| 1 | cup cucumber sliced |
| 1/2 | cup green pepper chopped |
| 1/2 | lime (juiced) |
| 1 | can black olives sliced or chopped |
| 1/4 | cup cilantro chopped |
| 2 3/4 | cups water |
| 1/4 | cup olive oil |
| 1 | Tbsp. salt-free seasoning |
| 1/4 | cup red wine vinegar |
Instructions
1. Mix together red wine vinegar, olive oil, salt free seasoning and lime juice.
2. Combine all vegetables and place in dressing to marinate.
3. Cook rice with water according to package directions. When cooked, set aside to cool.
4. Add vegetables and cheese to slightly cooled rice. Mix well.
5. Can be served as a salad or a wrap with lettuce.
