Chicken and Vegetable Ragout with Whole Grain Brown Rice

Ingredients
| 1 | cup UNCLE BEN’S® Natural Whole Grain Brown Rice |
| 1 | lb. chicken tenders |
| 1 | cup sliced mushrooms |
| 1 | cup green beans |
| 2 | tomatoes sliced into 8 pieces each |
| 1 | cup zucchini slices |
| 1 1/2 | tsp. fresh basil chopped (1/2 tsp. dried) |
| 3/4 | tsp. fresh thyme (1/4 tsp. dried) |
| 4 | cloves garlic sliced |
| nonstick cooking spray |
Instructions
1. Prepare rice according to package instructions.
2. Apply coating spray to large nonstick skillet. Add chicken and cook 2-3 minutes each side or until cooked through. Remove from skillet and set aside.
3. Add garlic, green beans, zucchini and cook for 2 –3 minutes. Add mushrooms, herbs and cook two minutes more. Add tomatoes and cook until heated through.
4. Pour ragout over chicken and serve with rice.
