Lemon Fish and Rice Almondine

Ingredients
| 1 | cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 2 | lb. sole fillet(s) |
| 1/4 | cup lemon juice |
| 1/4 | cup green onions chopped |
| 2 | Tbsp. almonds sliced |
| 1 1/2 | Tbsp. butter melted |
| 1 | lemon thinly sliced |
| paprika |
| 1 | tsp. salt |
| 2 1/4 | cups water |
Instructions
1. Bring water and lemon juice to a boil in medium saucepan. Stir in rice, salt and nutmeg. Cover tightly and simmer 20 minutes.
2. Remove from heat. Let stand covered until all liquid is absorbed, about 5 minutes.
3. Stir in green onions. Spoon rice into 13" x 9" x 2" baking dish. Arrange fish over rice; sprinkle lightly with paprika.
4. Drizzle fish with butter, top with lemon slices and sprinkle with almonds. Cover loosely with aluminum foil.
5. Bake at 400°F, 12 to 15 minutes or until fish flakes when tested with a fork.
