Carrot and Raisin Rice Salad

Ingredients
| 1/2 | cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 2 | medium carrot(s) |
| 1/3 | cup raisins |
| 1 | Tbsp. parsley chopped |
| 1 | pinch dry mustard |
| 1 | Tbsp. white wine vinegar |
| salt and pepper to taste |
| 3 | Tbsp. vegetable oil |
Instructions
1. Cook rice according to package instructions.
2. Whisk together ingredients for dressing, season with salt and pepper.
3. Toss rice in dressing while rice is still warm.
4. Grate the carrot.
5. Mix into rice with raisins and parsley. Check seasoning.
