Ingredients
| 4 | cups UNCLE BEN’S® Boil-In-Bag Rice |
| 1/2 | lb. ground beef |
| 1 | can kidney beans drained |
| 1/2 | cup onion chopped |
| 1/2 | cup low-fat Monterey Jack cheese shredded |
| 2 | Tbsp. cilantro chopped |
| 6 | tsp. package taco seasoning mix |
| 2 | oz. tortilla chips |
| 1 | can tomatoes (low-sodium), diced |
Instructions
1. Cook rice according to package instructions.
2. Meanwhile, in a large skillet, brown beef and onion. Drain off the fat and discard.
3. Add beans, tomatoes and taco seasoning to meat mixture. Bring to boil, then simmer 10 minutes or until mixture thickens.
4. Pour cooked rice into serving dish, top with meat mixture and arrange tortilla chips around outside edge of dish.
5. Sprinkle with cheese and cilantro. Serve.
