Pork Red Beans and Rice

Ingredients

1cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice
1lb. red beans
1/2lb. salt pork sliced
1Tbsp. parsley minced
1small onion sliced
salt and pepper to taste

Instructions

1. Pick through and wash beans.
2. Cover with water, add pork and simmer.
3. After 1 hour of cooking, add onion and seasonings to taste. Continue cooking until beans are tender, adding water as necessary.
4. Meanwhile, cook rice according to package instructions.
5. Serve beans over cooked rice.

Sear and brown onions and salt pork before adding to beans. This will enhance the flavor.
