Ingredients
| 1 | cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 1/2 | lb. shrimp (medium), cleaned and shelled |
| 1 | oz. cashews chopped |
| 1/4 | tsp. garlic powder |
| 1 | Tbsp. peanut oil |
| 1 | green onion chopped |
| 2 1/4 | cups chicken broth |
| 2 1/2 | tsp. soy sauce |
Instructions
1. In a shallow bowl, let shrimp marinate in peanut oil, soy sauce, garlic powder and green onion for 10 to 15 minutes in the refrigerator.
2. In a medium sauce pan, bring rice and chicken broth to a boil, reduce heat, cover and simmer 10 minutes.
3. Add shrimp and marinade to rice and cover. Simmer an additional 7 to 8 minutes.
4. Garnish each serving with green onions and cashews.
