Polynesian Shrimp and Rice

Ingredients

1cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice
1/2lb. shrimp (medium), cleaned and shelled
1oz. cashews chopped
1/4tsp. garlic powder
1Tbsp. peanut oil
1 green onion chopped
2 1/4cups chicken broth
2 1/2tsp. soy sauce

Instructions

1. In a shallow bowl, let shrimp marinate in peanut oil, soy sauce, garlic powder and green onion for 10 to 15 minutes in the refrigerator.
2. In a medium sauce pan, bring rice and chicken broth to a boil, reduce heat, cover and simmer 10 minutes.
3. Add shrimp and marinade to rice and cover. Simmer an additional 7 to 8 minutes.
4. Garnish each serving with green onions and cashews.

tips and notes
Add red pepper flakes or chili oil, for a little spice.
