Ingredients
| 1 | cup UNCLE BEN’S® Natural Whole Grain Brown Rice |
| 1/2 | cup red bell pepper diced |
| 2 | tsp. lite soy sauce |
| 1 | tsp. garlic |
| 3 | tsp. peanut oil |
| 1 | tsp. ginger |
| 1/2 | cup waterchestnuts drained |
| 2 | tsp. green chili peppers (canned) diced |
| 1/4 | cup pineapple juice |
| 1 | Tbsp. cilantro chopped |
| 1 1/2 | tsp. lime juice |
| 3 | Tbsp. chunky peanut butter |
| 1 | tsp. rice vinegar |
| 1/2 | cup pineapple chunks in juice, drained |
Instructions
1. Cook rice according to package instructions. Set aside and cool
2. Place the pineapple juice, soy sauce, peanut oil and ginger in a blender and process until smooth.
3. Toss dressing with rice, and then fold in the pineapple chunks, water chestnuts, red pepper, green chili pepper, rice vinegar, cilantro, garlic and peanut butter.
4. Chill well before serving.
