Pineapple and Brown Rice Thai Salad

Ingredients

1cup UNCLE BEN’S® Natural Whole Grain Brown Rice
1/2cup red bell pepper diced
2tsp. lite soy sauce
1tsp. garlic
3tsp. peanut oil
1tsp. ginger
1/2cup waterchestnuts drained
2tsp. green chili peppers (canned) diced
1/4cup pineapple juice
1Tbsp. cilantro chopped
1 1/2tsp. lime juice
3Tbsp. chunky peanut butter
1tsp. rice vinegar
1/2cup pineapple chunks in juice, drained

Instructions

1. Cook rice according to package instructions. Set aside and cool
2. Place the pineapple juice, soy sauce, peanut oil and ginger in a blender and process until smooth.
3. Toss dressing with rice, and then fold in the pineapple chunks, water chestnuts, red pepper, green chili pepper, rice vinegar, cilantro, garlic and peanut butter.
4. Chill well before serving.
