Ingredients
| 1 | cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 1 | can mandarin orange segments |
| 1/2 | cup crushed pineapple |
| 1 | Tbsp. butter |
| 1 | Tbsp. chopped shallots |
| 2 | Tbsp. currants or raisins |
Instructions
1. Drain the mandarin orange segments and pineapple, but reserve the liquid.
2. Add enough water to fruit juice to make 2 1/4 cups.
3. Cook the rice in the fruit juice according to package instructions with 1 Tbsp. butter.
4. Fold in the currants or raisins and heat.
5. Just before serving, fold in the shallots.
6. Season to taste with salt and pepper.
