Persian Rice

Ingredients

1cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice
1can mandarin orange segments
1/2cup crushed pineapple
1Tbsp. butter
1Tbsp. chopped shallots
2Tbsp. currants or raisins

Instructions

1. Drain the mandarin orange segments and pineapple, but reserve the liquid.
2. Add enough water to fruit juice to make 2 1/4 cups.
3. Cook the rice in the fruit juice according to package instructions with 1 Tbsp. butter.
4. Fold in the currants or raisins and heat.
5. Just before serving, fold in the shallots.
6. Season to taste with salt and pepper.

tips and notes
May use green onions instead of shallots if preferred.
