Ingredients
| 1 | package UNCLE BEN’S® Long Grain & Wild Rice Butter & Herb |
| 1 | lb. large shrimp cleaned and peeled |
| 1/4 | cup olive oil divided |
| 2 | Tbsp. salt-free Italian seasoning blend (i.e. Mrs. Dash) |
| 2 | cups frozen mixed vegetables |
| 6 | skewers |
Instructions
1. Prepare rice according to package directions.
2. In Small mixing bowl, combine seasoning blend with half the olive oil. Set aside. Place shrimp onto wooden skewers evenly. Brush herbed oil mixture on both sides. Heat remaining oil in a large non-stick skillet. Place Skewers into hot skillet. Cook shrimp until cooked through or about 2-3 minutes on each side. Remove and set aside. Steam or stir fry frozen vegetable blend until heated through. Add salt and pepper to taste.
3. Serve skewers with rice and vegetables. Garnish with lemon wedges.
