Ingredients
| 1 | cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice |
| 2 | chicken breast halves, boneless and skinless cut into 1/2" strips |
| 1/2 | cup onion diced |
| 1/2 | cup green bell pepper diced |
| 4 | oz. smoked sausage (low-fat) |
| 1/2 | lb. shrimp peeled and deveined |
| 1 1/2 | cups tomatoes diced |
| 1 | tsp. garlic minced |
| 1/4 | tsp. saffron |
| 1 | tsp. salt |
| 1/2 | tsp. black pepper |
| 2 | Tbsp. olive oil |
| 1/4 | tsp. turmeric |
| salt to taste |
Instructions
1. Cook rice according to package instructions. While the rice is cooking, cut the chicken into 1/2" strips.
2. Heat the oil in a skillet and sauté the onion, garlic and pepper until crisp-tender.
3. Add the chicken and sausage and continue to sauté until chicken is about half-cooked.
4. Add all the remaining ingredients except the tomatoes. Stir and cover.
5. Steam until the chicken and shrimp are fully cooked. Stir in the tomatoes.
6. When the rice has finished cooking, mix together and season with salt and pepper.
