Paella

Ingredients

1cup UNCLE BEN’S® ORIGINAL CONVERTED® Brand Rice
2 chicken breast halves, boneless and skinless cut into 1/2" strips
1/2cup onion diced
1/2cup green bell pepper diced
4oz. smoked sausage (low-fat)
1/2lb. shrimp peeled and deveined
1 1/2cups tomatoes diced
1tsp. garlic minced
1/4tsp. saffron
1tsp. salt
1/2tsp. black pepper
2Tbsp. olive oil
1/4tsp. turmeric
salt to taste

Instructions

1. Cook rice according to package instructions. While the rice is cooking, cut the chicken into 1/2" strips.
2. Heat the oil in a skillet and sauté the onion, garlic and pepper until crisp-tender.
3. Add the chicken and sausage and continue to sauté until chicken is about half-cooked.
4. Add all the remaining ingredients except the tomatoes. Stir and cover.
5. Steam until the chicken and shrimp are fully cooked. Stir in the tomatoes.
6. When the rice has finished cooking, mix together and season with salt and pepper.

Note: 1 lb. total weight for chicken used for nutritional analysis.

Add in red pepper flakes or diced jalapeño for spicy paella.
